Interesting. Like most honey with the exception of "raw" I assumed there was heat processing involved in Agave syrup. I had a hard time imagining a spigot on the side of a plant with the beautiful syrup flowing. I agree with the excellent research...

I see you're signed up for the Applesauce canning this weekend. I'll see you there. I'd be glad to share what I know about canning. All self taught and still learning. I know a couple of people that I need to hook up with who are old school canners and experts at it. Look forward to learning more from them. If you're not in a hurry after the canning session Sunday, perhaps we can chat a bit.
Sounds like you're heavy into naturopathy and herbalism. Thats an area where I'd like to learn as much as I can. Look forward to sharing and having some fun.
