This is the red wine vinegar's mother. It feels like a liver!

I transplanted it to the now diluted white wine vinegar, to see if it would help it grow one of its own.

Right on. It took just over a month for that one to grow. So, if it grows at the same pace this time, the next one will be ready sometime around the first week of December.

Cool. Well if you need some mother to get started, let me know. Apparently it keeps growing them until pasteurized.

Thanks, I plan on making some lower quality vinegar soon as part of a gardening experiment I am running and I am thinking about the best place to have it. I am planning on making about 50 gallons in the first batch, I may only make 5 gallons the first time though, either way it won't be very easy to move once I get it going.

The vinegar resides in the back corner of the pantry. I just put it there when I'm working on it, and wipe down the area when I'm done.

It's smells... vinegary! I'll probably give a taste soon. I plan on aging it a good long while. The white is diluted, but the red is not. I may add a little water to it.

I've heard that putting some wood chips in the jar helps to mellow it out some as well. I happen to have some apple wood chips for the grill that I could use.

I would move it off the granite, if any gets on it and you do not see it you will have some hard to remove damage.
How does it smell? I am going to be growing some vinegar for different reasons and last time I did that I remember it as being strong smelling but it was so long ago I am not sure.
